Creative Cupcakes

Attended the Wilton Creative Cupcake Workshop to learn how to decorate the sunflower, baby in blanket, pussy cat (mine looks more like a dog) and daisy with ladybug on a cupcake. It was really fun.

Thai chili pork

This dish was taught by my mum. Simple and nice. You can replace the pork with chicken (about 300g). Mixed the pork with tapioca starch and salt, fry it and put aside. Place 1/4 a cup of water, 2 tbsp tomato sauce, 2 tbsp thai chili sauce and 1 tbsp of sugar. Stir the mixture until little bubbles appear. Then pour in the fried meat.

Ma Po Tauhu

This dish goes very well with rice. Fry both chinese and button mushroom with minced meat until fragrant. Add a little tomato sauce and a tbsp of Chili Bean paste. Then place a box of bean curd and water. Lastly add cornstarch to thicken the sauce. Serve hot.

Fried rice with "ayam masak merah"

Need to prepare a quick dinner so used the ayam masak merah sauce for the chicken. It's good to have some instant sauces at home for quick and easy meal :-)

Chicken in home-made wine

A recipe from mum. Fry chopped ginger with sesame oil until fragrant. Place the chicken followed by dark and light soya sauce and a pinch of salt. Pour in a can of button mushroom. Add in home-made wine and let it simmer for about 20 minutes. Lastly thicken the sauce with cornstarch.

Pizza Cream Cracker

Thanks to Hugbear for this lovely recipe. It's simple, delicious and most importantly family loved it.

Firstly, spread tomato sauce, top with tuna in mayo and sprinkle some cheddar cheese. Bake for 10 minutes at 180C.

Peanut Butter Chocolate Chip Mini Muffins

This recipe was adopted from Homecooking. Here my sweet little helper having fun placing the chocolate chip on the muffins.

Ingredients:

3/4 cup peanut butter
2 tablespoons butter, melted
1 cup sugar
2 eggs
1 tablespoon vanilla
1-1/2 cups flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup milk
1 cup (6-ounces) semi-sweet chocolate (about)

Preparation:
Preheat the oven to 350 degrees F. In a large bowl, combine the peanut butter and butter until well blended. Mix in sugar, eggs, and vanilla extract. Combine flour with baking powder, baking soda, and salt. Add to peanut butter mixture along with milk. Mix well. Spoon into the muffin tins. Press chocolate chips into the center of each muffins. Bake for 10 to 12 minutes, until edges are lightly browned.
